Da série PRATOS ESQUECIDOS. Comia-se tartaruga, no Rio. Era chique. Nas mesas da época do Império, vinham em bifes. Pastéis, fricassés e fricandós eram anunciados pelas casas de pasto; sopas de tartaruga abriam grandes banquetes.
